The Vinyard Il Civettaio belongs to Paganico, about 20 minutes from the Guarda Mare, very close to Montecucco and also very close to Montalcino. Its owner, Gregorio, produces excellent wines that have a lot to offer.

Il Civettaio – Organic – Maremma Toscana Sangiovese DOC

Made exclusively with Sangiovese (100%) grapes in the vineyards of:
– Campo dell’Oliveto: planted on a mainly clay with fractured sandstones soil (30%) with a south East exposure
– Salita dei Montagnoli: planted on a slope (15%).The plantation is traditionally “a ritocchino” on the maximum slope with a south exposure
All our vineyards are organic
The work of the soil, weeding and harvesting are done exclusively by mechanical means or manually. Vegetal fertilization is used with no chemicals. Grape thinning takes place in July to keep the yield lo: about 1 kg grapes per plant. Following some regular test to measure the level of sugar and acidity (Ph) in the grapes and depending on the richness of polyphenols, the harvest takes place at the best point of maturation, usually at the end of September. The grapes are picked by hand and carefully selected directly in the vineyards. The grapes arrive in the cellar, transported in small cases, where they are pressed. Fermentation takes place in oak tanks (40 hl) and steel vats. The malolactic fermentation is done on April-May. The aging is in big oak cask, for a minimum of 18months, until the bottleing. We do not filter the wine before bottling.

Characteristics: Taste of plums and red berries that develops gradually in the mouth. Very pleasant and fresh with fruity notes. Hint of liquorice.
