Description
The Vinyard Il Civettaio belongs to Paganico, about 20 minutes from the Guarda Mare, very close to Montecucco and also very close to Montalcino. Its owner, Gregorio, produces excellent wines that have a lot to offer.
Chiù – Organic – Igt Toscana Rosato
Chiù Rosè gets its name from the nocturnal birdsong of the Chiurlo, a typical bird from Maremma. During the Spring nights you will hear his song – Chiù – coming from the Pine trees in front of the cellar. In this period Chiù is bottled. Chiù is made with Sangiovese (90%) and Alicante (10%) grapes, picked slightly earlier and carefully selected by hand. All our vineyards are organic.. The work of the soil, weeding and harvesting are done exclusively by mechanical means or manually. Vegetal fertilization is used with no chemicals. Grape thinning takes place in July to keep the yield low. Following some regular test to measure the level of sugar and acidity (Ph) in the grapes and depending on the richness of polyphenols, the harvest takes place at the best point of maturation, usually at the end of September. The grapes are picked by hand and carefully selected directly in the vineyards. The grapes arrive in the cellar, transported in small cases, where they are pressed.
The vinification occurs around 15 degrees with a prolonged fermentation in stainless steel vats only.
After some decanting, Chiù is bottled in early April. The yearly production is very limited, around 3000 bottles.
Characteristics The color of the Chiù is a brilliant, intense pomegranate pink. At the nose, it shows fresh aromas of strawberries and cherries, with hints of violets and cyclamens.
Pleasant to drink, fresh and delicate, Chiù pairs well with light appetizers, pasta, poultry, savory tarts and salads. It’s perfect just as an aperitif or to accompany a light meal.
